The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Method
To prepare the Cordial: Combine the listed items inside a pan, bring to a light boil, agitating to dissolve. Next, take off the stove and leave to cool completely. Decant to a clean bottle, seal and refrigerate it chilled, where it will keep for around four weeks.
To make Premix: Pour all the liquid ingredients into one big jug, leave to sit for one hour, then filter it , ideally through cheesecloth, so it's completely strained.
For serving: Measure 85ml of the premix into a cocktail shaker filled with ice, and stir gently for one minute to cool it down. Pour to a cold coupe glass or similar, top with some cranberries adding the final touch by giving it a brief mist of mandarin oil over the drink.
